Camera Roll and a Recipe

Rain, Rain go away...

Photobucket

I must admit, I've been thoroughly enjoying this mild "winter" we've been having down here, but it seems like every day that's actually warm, it rains! When the sun finally comes out, there's a little chill in the air... and I wouldn't be complaining- but it sure would be nice to "study" at the beach one warm sunny February day. I'll just keep waiting...

Photobucket

Our anniversary and Valentines Day fall within a week of each other and it's kind of nice when you want to do something reeeeally nice... It's a great way to justify eating at a fancy schmancy high falutin' kind of place in celebration of both special days.

Photobucket

Aaron's gumbo and my pea soup {with a drizzle of olive oil on top}... and the butter for the bread was amazing... I'm gonna have to experiment and figure out how they doctored it up!

Photobucket

House Salad with Green Goddess Dressing and a glass of Reisling from none other than a winery in Washington- very close to our "summer home". That's half the reason I ordered it... I got sentimental for the flavors of home.....  ;)

Photobucket

... and while this is a very UNappetizing photo of my main dish, let me just tell you it was a dream to eat.  Blackened Amberjack with a preserved lemon sauce drizzled on top over a bed of mushrooms and manchego risotto... yes, I will be attempting to replicate the risotto one of these days, and when I do, I just might share it with you!

Photobucket

One of Aaron and mine's favorite nerdy ways to kill time is to hang out at Barnes and Noble. I love to get a starbucks, browse around and collect a rather large stack of books and magazines to read while I sip my latte. Aaron's idea of "reading" consists of oohing and ahhing over the Guiness Book of World Records... And I ask, "how old are you?"

Photobucket

I took this picture the other day when we were both subbing {I skipped a class to make a few $$} because it cracked me up. A boy comes in my classroom- not late at all- with this autographed "pass" that Coach Weatherford insisted he take to Mrs. Weatherford's class. I couldn't help but grin when I saw it.

Photobucket

Despite skipping class one day to sub, I have been studying hard... well, trying to. There's a little kitty cat who insists I look at him instead of my books.

Photobucket

And lastly, I have a recipe to share with you. I whipped it up for lunch and it was way too simple and delicious not to share.

Angel Hair with Sundried Tomatoes and Hearts of Palm

~ cook pasta
~ slice a few hearts of palm {they're delicious and taste just like an artichoke}
~ chop a few leaves of fresh basil
~ transfer pasta to your bowl {I clearly made way too much}
~ pour in a few splashes of heavy cream {like a few tablespoons}
~ add a few tablespoons of parmesan cheese
~ add LOTS of freshly ground black pepper
~ add in a handful of sundried tomatoes
~ add your chopped hearts of palm
~ add the chopped basil
~ toss and enjoy! {If you want to add some protein, chicken breast would be delicious with this}

Photobucket

You get the acidic tartness from the sundried tomatoes and hearts of palm, the freshness from the basil, and a good kick from the black pepper... {If you watch her on food network, you'll know exactly who I'm imitating...}

Have a great weekend everyone... hope yours is more sunny than mine!

So Delicious

By the title of this post, you may think I'm sharing a recipe today... Well, not so much.

As you may or may not know, Aaron has been substitute teaching at the high school on and off this offseason. {I was for a little while, but now I'm taking my own classes.}

Now, I know I'm a little biased when it comes to the good looks of my own husband... I mean come on, I married him!

Photobucket

And rumor has it that some little high school girls agree with me...

Now, we have all sorts of little names that we call each other {as most couples do} but there's one nickname that these girls have come up with on their very own!

Y'all are gonna die.

I mean, I did. {and he definitely did.}

Without further adieu, let me introduce you to my husband Aaron Weatherford... also affectionately known to some as...

Photobucket

"Mr. Yummy Pants."

Photobucket

And while I WHOLEHEARTEDLY agree with the little ladies, I seriously almost peed my pants when he embarrassingly informed me of this the other day. Mr. Yummy Pants really?? Why didn't I think of that??

And to make things even better, he's also been informed that there are all kinds of "mobile uploads" of "Coach Weatherford" circulating all over facebook!! I guess they snap pictures of him with their phones during class... He had no idea.

I wonder what they would do if I just so happen to "tag" myself in some of these pictures... HA! I love it. I really do.

You know why I love it?

Photobucket

Because he's ALLLLLL MINE!!!!!!!

hehe!

Photobucket

Has it really been three years since that special day?

Photobucket

If you want the full story of our big day with tons of pictures included, you can click here, here, and here.

Photobucket

I don't think that I have ever showed y'all our feature in Mississippi magazine but I'm sure many of you have seen it. {If you're a Mississippian.}

Photobucket

I took a picture of the actual magazine pages because I didn't feel like fooling with the scanner so although you can't read the words, you can still get the jist of the spread!

{This -the upside down picture of the cake- is what happens when you're photographers are not familiar with Mississippi universities and football.  Something we laugh about from the day! We just say it's Aaron's initials.}

Three years ago, the theme of our wedding was pretty out of the box in comparison to most traditional southern weddings. Are we "out of the box" people? No, not at all. We simply wanted a day that reflected both of us and our families and that meant dainty and rustic details.

Photobucket

I was a little nervous when we decided to do the boots thing... because I had never seen it before and I am NOT a trendsetter and don't intend to be... but as I was browsing through this year's Mississippi magazine and pinterest and facebook, it was confirmed that we weren't loonies with a different, non-traditional idea. I thought, "Yay! People weren't just 'being nice' when they said the boots were a 'unique cute idea'!"

Photobucket

Photobucket

It was a day of all my favorite colors, my favorite people, Aaron's favorite style, and his favorite people... it was a day that reflected US.

Photobucket

And oh I just thought I loved him then... I even thought I knew almost all there was to know about him...

Photobucket

Three years later, I'm still learning and my appreciation and respect for him has multiplied. As well as annoyances and his irritating habits that drive me CrAzY!!  {Don't you worry, he would say the same for me :) }Have these three years been easy? No, not really. We've been stretched out of our comfort zone and have dealt with many bumps in the road along the way... {literally and figuratively}.

Photobucket

God had us right where he wanted us to be that day... He had already seen the bumpy road ahead, and He knew that two travelers would be better than one.

Photobucket

And of course, He was right.
